A Beginner's Guide to Whisking Matcha
New to matcha? Here's the simple version.
Step 1: Sift first. Matcha clumps easily — a quick pass through a fine sieve keeps it smooth.
Step 2: Use water just off the boil. Around 70–80°C is the sweet spot. Boiling water can scorch matcha and turn it bitter.
Step 3: Whisk in a W or M motion. Fast, light strokes create the foam matcha is known for — no need to press hard.
Step 4: Start with less than you think. About 1–2g of matcha (roughly half a teaspoon) with 60–80ml of water is a good starting ratio. Adjust from there to your taste.
Step 5: Drink it fresh. Matcha is best whisked and enjoyed right away, while it's still vibrant and foamy.
